Ravenous Red Curry Meatballs

Curry Meatballs

Ingredients:

Meatballs:

1 pound ground chicken

1/2 cup panko breadcrumbs

3 garlic cloves, minced

1 teaspoon fresh ginger, minced

1 large egg

1/8 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon cayenne pepper

1 tablespoon fresh chopped cilantro, or 1/4 teaspoon dried

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/8 teaspoon paprika

1/8 teaspoon curry powder

Naan bread – for serving

Red Curry Sauce:

1/2 tablespoon extra virgin olive oil

1 teaspoon fresh ginger, minced

3 garlic cloves, minced

1-2 tablespoons concentrated red curry paste (or more depending on your heat tolerance)

3/4 cup lite coconut milk (you can use regular but I was trying to be healthier)

1 teaspoon sriracha

1/8 teaspoon pepper

1/8 teaspoon salt

1/8 teaspoon red pepper flakes

1 tablespoon fresh chopped cilantro, or 1/4 teaspoon dried

1/2 tablespoon lime juice

Instructions:

For the Meatballs:

  1. Preheat oven to 400 degrees.
  2. Lightly grease a baking sheet with oil.
  3. In a large bowl add all of the meatball ingredients. Mix to combine but don’t overmix
  4. Roll into 12 balls (if sticking to hands, wet your hands)
  5. Place meatballs on the oiled baking sheet and bake for 15-20 minutes flipping halfway through cooking.  They’re done when lightly browned on the outside and no longer pink
  6. Take out of the oven and toss the cooked meatballs in the Red Curry Sauce (instructions below)
  7. Once finished, garnish with extra cilantro if desired

For the Red Curry sauce:

  1. Heat oil in small saucepan
  2. Add garlic and ginger and saute for 1 minute
  3. Add in curry paste and cook for an additional minute
  4. Add in coconut milk and whisk until thick,and yields a brown color.  This should take about 2-3 minutes then remove from heat
  5. Toss in Sriracha, pepper, salt, red pepper flakes, cilantro, and lime juice ** if you find the lime juice too pungent, add a dollop of oil to balance **
  6. Set aside until ready to mix with the meatballs
  7. Place in bowls and top with toasted naan bread
