Energy Balls

RECIPE:

Serving Suggestion: 16-20 Balls

Ingredients:

1 cup old fashioned oats

1/2 cup peanut butter

1/2 cup ground hemp seeds

1/2 cup chocolate chips (I used the dairy free kind) and/or raisins

1/3 cup honey or agave nectar

1 tablespoon chia seeds

1 teaspoon vanilla extract

1/8-1/4 cup coconut (optional)

1/8 teaspoon cinnamon and more for sprinkling

Directions:

  1. Stir all ingredients together in a medium bowl until thoroughly mixed
  2. Cover and let balls chill in the refrigerator for half an hour
  3. Once chilled, roll into balls about 1″ in diameter (I used a heaping cookie scoop)
  4. Sprinkle with cinnamon
  5. Store in an airtight container and keep refrigerated for up to 1 week or freeze
