Blissful Blueberry Banana Oat Muffins

Banana Oat Muffins

RECIPE:
Serving Size:  12 Muffins

Instructions:

1 1/2 cups unbleached all-purpose flour

1 cup rolled oats

1/4 cup white sugar

1/4 cup brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 large egg whites (or 1 large egg)

3/4 cup almond milk (regular milk will also work)

1 cup mashed banana (about 2 medium bananas)

1/3 cup unsweetened apple sauce (you can use vegetable oil to make it less healthy)

1 cup blueberries

1/2 teaspoon cinnamon

Directions:

  1. Combine flour, oats, sugars, baking powder, baking soda, cinnamon, and salt
  2. In a large bowl, beat the eggs lightly. Stir in the milk, applesauce, and vanilla.  Once tossed, add the mashed banana, and combine thoroughly
  3. In one cup increments, stir the flour mixture into the banana mixture until just combined.
  4. Fold in the blueberries
  5. Line a 12-cup muffin tin with paper bake cups, and spray with cooking spray to avoid sticking and divide the batter among them
  6. Bake at 400 degrees for 18 to 20 minutes
