Crispy Cucumber Salad

Cucumber Salad Attempt 2

While visiting the in laws in Pennsylvania, I was overwhelmed by all of the vegetables, fruit, and herbs they have at their disposal.  I dream of having a garden one day (and not killing everything), but for now it will remain a dream!  Until it becomes a reality, I will mooch off of the in laws 🙂

Among other items, they were able to send me home with 3 delicious and plump cucumbers and a handful of fresh dill; with it, a recipe that was handed down from her mother, so I was very excited to try it.

If you love cucumbers and vinegar, with a sweetness of sugar and red onion then you must try this as a nice appetizer, snack, side dish, or even lunch!

RECIPE:

Serving Size: 4 People

Ingredients:

4 large cucumbers

1 red onion thinly sliced

1 tablespoon dried dill weed or 3 tablespoons fresh dill (more or less)

1 cup white sugar

1/2 cup white vinegar

1/2 cup water

1 clove garlic (optional)

1 teaspoon salt (optional)

Directions: 

  1. In a large serving bowl, combine cucumbers, onions, garlic and dill
  2. In a medium size bowl combine sugar, vinegar, water and salt; whisk until the sugar dissolves
  3. Pour the liquid mixture over the cucumber mixture
  4. Cover and refrigerate at least 2 hours before serving (marinating longer enhances the flavor!)
