Perfect Pasta Salad


On a hot summer day, there’s nothing better than something cold to cool you off!  Although a nice glass of water is always my go to, when I”m hungry, pasta salad is always my first choice.  Although not something you can have every day, it certainly is a nice treat by yourself, with some friends, on a picnic….anywhere!  While visiting my parents in Myrtle Beach, my mom and I wanted to make something that would be a nice snack for the beach and for those hot days….since there are plenty of those!  Thanks mom, for helping me prepare a tasty dish to make any time I’m home sick 🙂

What I love about pasta salad is it’s something that can be modified to what you like….add sun dried tomatoes, leave out the peas, add a homemade dressing:  make it your own!


3/4 pound of pasta

2 small tomatoes chopped

1 tablespoon dried basil (or about 4 leaves chopped, if using fresh)

1/4 cup balsamic vinaigrette

2 scallions chopped

1 cup frozen peas thawed

1 tablespoon Garlic Powder

1 tablespoon Onion Powder

Salt and Pepper to taste

Red pepper flakes to taste


1.  Cook the pasta according to package directions

2.  When pasta is finished mix all ingredients together while pasta is warm so it can absorb the flavor

Serving Suggestion:  With a nice glass of white wine, or just on it’s own is how we did it 🙂
